Quick and delicious~ Instant pot Mexican stew


I asked what you would like to see more of at Sonya’s Happenings… and A LOT of you asked for recipes. Well, I have a great instant pot recipe for Mexican Stew. I enjoy Mexican foods, so I really hope that you like this.

Quick And Easy Instant Pot Mexican Stew

I’ve asked you all for blog suggestions and SO many of you wanted recipes. I have a quick and easy recipe for instant pot Mexican stew. This is SO easy, that I can make it : )

  • 1 1/2 pounds chopped beef stew meat
  • 2 cups mini potatoes (sliced in half) ( (no need to peel))
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 cans Fire roasted tomatoes
  • 1/2 diced onion
  • 1 poblano pepper (diced) (seeds removed)
  • 2 jalapeño peppers (diced) (seeds removed)
  • 1 tbsp minced garlic
  • 1 14oz can of pinto beans (drained)
  • 1 mexican flavor bouillon
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1 tsp cayenne pepper
  • 2.5 cups chicken broth
  1. Turn instant pot on sauté and add olive oil

  2. Pat the beef dry with a paper towel

  3. Add beef to the Instant pot and season the beef with salt and pepper

  4. Toss the beef to lightly sear, for 5 minutes

  5. Add the rest of the ingredients to the Instant Pot

  6. Stir to combine

  7. Turn instant pot on meat/stew, secure lid and turn vent to sealing

  8. The timer should be set for 45 minutes

  9. Quick release the instant pot by turning the steam valve from seal to vent

  10. Stir to combine

  11. Serve with fresh cilantro and sliced jalapeño

I can eat soups and stews at any time of the year.  They are comfort food to me. So if you are like me, you’ll find this Instant Pot Mexican Stew just as wonderful as I do.

  • From the photo, it looks delicious! I’ve not eaten Mexican food that much in my life because it’s mostly spicy but this recipe seems quite my taste.

    • I knew someone had to be like me and like stews and soups year-round. I also LOVE chili year-round. Chili is something that I can make that Michael (and the Church really loves but it is made from a mix, lol).
